If you want to try some traditional Oaxacan cuisine, look no farther than Santa Clara. If you value authenticity you won’t mind going off the beaten track to taste their entirely handmade menu.
Something you wont find in just any restaurant is their signature dish, Pollo al Barro. This unique dish takes about 5 hours to make and requires giving the restaurant 24 hours notice. It will cost you around $38.00 but feeds around 5, the perfect dish for if you’re a group a people wanting a genuine and uniquely prepared Mexican meal.

Another excellent dish recommended by the head chef, and owner, is Chile en Nogada. This sweet dish is a mixture of whatever fruit is in season, often peach, banana, apple and pear. The filling consists of approximately 90% fruit and 10% meat (beef), almonds, garlic and onions.
The ingredients are combined and cooked in a pan, at this point a chile is cooked on a fire grill to help peel and seed the vegetable. The chile is then cut, stuffed, and covered in egg before being grilled to perfection. Finally before being served, the entire dish is covered in a creamy nut sauce.
This meal will cost you around $14, a very reasonable price for a main. Although this dish may seem a little out of the ordinary, it should speak volumes that the chef recommended it despite it being cheaper than many other dishes on the menu.
